We’ve had a delicious St. Patrick’s Day Oven Irish Boiled Dinner. We made a couple of nice loaves of our Southern Irish Soda Bread made with self-rising flour. We drank a bunch of great beer. And we’ve got some leftovers.
Irish Boiled Dinner Soup is how we put the must-gos to best use. Here’s how:
Saute a chopped onion in a little oil in a stockpot. Add water and/or chicken broth to the pot. Add leftover potatoes to the pot and blend with an immersion blender until smooth. Now add chopped leftover corned beef, cabbage, carrots, and potatoes. Heat through and serve with leftover soda bread and more beer.
